Vegan, Gluten Free Gnocchi

Gluten Free Gnocchi

  1. Gluten Free Gnocchi (pre-made or home made)
  2. Red Sauce or just Olive oil, garlic and white wine
  3. Assorted veggies: I like mushrooms, chard or spinach, onion, garlic and red pepper
  4. Vegan Cheese (optional)
  5. Vegan Sausage or Pepperoni (optional)

A few notes about the ingredients:

Pre-made gluten free gnocchi: check out your local health food-type store. (We actually order gluten free gnocchi online, unfortunately, as it is hard to find locally which is ironic because gnocchi is just supposed to be made from potatoes!).

Home made or pre-made tomato sauce. (I like Arrabiata Sauce, available at Trader Joe’s…kinda spicy.)

Faux Parmesan, mozzarella or other cheese. (Make your own or use any of the available. I like Parma and Miyokos.)

Toppings are your choice. My video shows chard, mushrooms, onion, garlic, roasted red peppers and faux sausage

I prepared the ingredients of the dish while making the vegan, gluten free pizza. If you are making this dish on its own, make sure you prep the ingredients before cooking the gnocchi. You can boil the water and just keep it “on the ready”

In a sauté pan, I sauté thinly sliced onion, garlic, mushrooms and faux sausage in the

Arrabiata sauce until the mushrooms and onions are soft.
